I think its pretty much to each his own. Green seems to be popular however.

Being creatures that belong to a very magically-oriented culture, as well as plainly being magical creatures, dragons tend to disguise themselves as spellcasters or spellswords (essentially a warrior who uses magic (paladins being holy spellswords, death knights being necromantic spellswords). The term doesn't originate in Warcraft.)
Rarely dragons disguise themselves as hunters, rangers, rogues, and warriors, though. They are like any race, there's no real absolute choice; diversity and all that.
A quick summary, building onto Madgod's post:
Black - Warlocks, Shamans, Mages, Battle/Warmages.
Bronze - Mages, Battle/Warmages, Spell Breakers (?).
Green - Druids, Mages, Battle/Warmages.
Red - Druids, Priests, Paladins (?), Mages, Battle/Warmages.
Blue - Mages, Battle/Warmages, Spell Breakers.
Plagued/Undead - Death Knights, Necromancers, Warlocks (?), Mages, Battle/Warmages.
The (?) being the ones that I'm unsure about.
I meant like Frost Wyrms, Ember Wyrms, etc.
Black - Blood Elves, Humans, Orcs, Draenei. (Orcs and Draenei are only seen in BEM.)
Bronze - High Elves, Blood Elves, Gnomes, Humans, Draenei.
Green - Night Elves, High Elves.
Red - Night Elves, High Elves, Humans, Blood Elves, Goblins.
Blue - High Elves, Blood Elves, Humans.
Plagued/Undead - Blood Elves, High Elves, Humans, Forsaken. (All using Death Knight skins, probably. We haven't seen any, but I'm guessing.)
Ultimately, you can shapeshift into any mortal race as a guise, but the above are the most common.
I'm pretty sure the ones youi're talking about aren't actual dragons, but dragonkin... cultists, and such.
