From what I understand, everyone has a different payment. Basically everyone can afford to hire the Faceless. The payment is supposed to be meant as a sacrifice for the person doing the hiring, and not so much an actual value of currency.

Well the person who suggests there is a monetary value is Littlefinger. Perhaps the only thing he cares enough about is the gold made through his brothels, so that's why his price was gold and is the only reference point he has. Or he's only heard rumors.

Ghost and Nymeria but Nymeria hasn't been referenced since the first season.

Of course, but rumors of him being alive are around since season 1, since a) his death is not shown, and secondly when it went offscreen, we clearly hear the clang of steel hitting the floor. However Syrio did not carry a steel sword or armor, so he might have knocked out or disarmed Trant and escaped. And Trant clearly would be to ashamed of telling anyone, that he lost against an unarmored and unarmed guy. No matter if First Sword of Bravoos or not. Would be quite embarrasing for a member of the kings guard. On the other hand, the Hound and Barristan Selmy don't talk too impressed about Trant's skills in the first place.
