It's as if the Aliens in the original Independence Day had landed troops armed with crossbows and lances to fight the humans.
It does make sense though if you look at it from a particular angle; maybe some demons have hi-tech, but the majority are mindless thugs. If you are one of the technocrats, you provide them with technology they can understand. A similar line of thought was explored in one of the chapters of Iain Bank's "Use of Weapons", where an interstellar war with proxy battles between races allied to the 2 sides end up with ludicrous scenarios like mounted cavalry shooting down fighter-jets using crossbows with guided explosive warheads on the bolts.

The Chronicles Vol.1 book. Sargeras saw the corruption of the Void Lords/Old Gods, went mad, freed the demons, became Fel-infused by a big explosion when he freed said demons, Pantheon didn't want to listen, he cut them down, and is now on the hunt for corrupted worlds to 'free' of said corruption.

So technically speaking Sargeras is still a good guy, but he's just using terrible means to justify his ends.

Our tech really isn't so much worse. They have smaller flying ships but we have Flying Dalaran, Scourge have Naxxramaxs. Then we have mages, warlocks who can port and summon us.

That is quite wrong. You should read Chronicles.
With Pantheon, his purpose is to find and protect other Titans and would-be Titans (world-souls). But after witnessing the act of void lords due to old gods, he decided the best course is to purge everything. To him, losing a world soul is worth it if it's gonna eliminate the chance of void-corruption. So he seeks to destroy AGAINST corruption, he doesn't seek to corrupt.

That being said, spaceships banging the place would take ages to destroy. You need to get down there and take control and maybe do something like overloading the ley lines to explode the world.
So ships by itself aren't much as someone put it: They are kind of artillery&support.

Given how long they've been staging this a few months of it rather than a few weeks might not go amiss.

You are realy lacking knowledge about warcraft lor. You should read Chronicles vol.1 as it clearly establish the history of the titans, of Azeroth, of Sargeras corruption and much more

that is no longer the case. Legion spoilers now say Sargeras wants to corrupt and bang Azeroth. Azeroth is female. Apparently from what i heard when sargeras lost his body in wota, he saw sleeping Azeroth and she opened one eye. Which caused him to fal in love with her.

When did they introduce that the planet azeroth is a baby titan in its egg (i guess?) stage? Did it come with that book or has it always been the story?

This was established in Warcraft Chronicles and it was the first time we heard it.

The Naaru would play a big part towards that i believe

Dont forgot the fact they can summon buildings and demons enmass right ontop of us. The scenario on broken shore even has greymane comment on how different the legion strategies are against their first arrival.

Sargy wants to destroy the world soul to save it from the Void Lords' corruption. Corrupting is supposed to be the Old God's job.

Actually Sargeras wants to corrupt Azeroth, not destroy her.

Wrong, Sargeras wants to corrupt her.

You're confusing the Legion with the Void Lords. The Legion wants to destroy planets so that there can be no corrupted titans. That's why planets are completely shattered after the Legion invades. They recruit anyone willing to join, then sunder the planet.

Sargeras is literally stronger than the rest of the burning legion combined.
