I don't know how to properly explain it, but... Well, I don't like copying others' ideas. When I write my music, I want it to sound fresh, original. And yet it often ends up being quite similar to other composers' songs. It might even sound amazing, but it rarely sounds fresh. And if I truly try to make it sound fresh, then it sounds too marginal and clunky.
Plus, since I record all instruments on piano, there are some natural limitations to what I can do. Wind instruments are almost not an option, since it takes ages to make a track recorded in such a way sound plausible. Electric guitars are very hard to record: and while I have a nice electric guitar at home, I'm simply nowhere as good at playing guitar as I am at piano. Drums can be done, but they take a lot of work, if I want to make something even remotely complicated.
To summarize, it takes a lot of time to make something amazing, and the process can be quite frustrating. I just usually lack the patience and self-confidence to complete whatever I'm making... I agree though that it is a good learning experience!
