I'm sorry, if you're sitting from a mid/far range distance spamming Genji's shurikens, you're just tickling the team most likely as long as they have a competent healer. He is not picking anyone off at range, he still needs to get decently close to do much.
And no, Winston is not the sole counter to Genji, he struggles against any tank. He can't harass Reinhardt from a distance because of his shield, and Reinhardt will wipe the floor with him in close range. Roadhog has too much HP, so yet again, Genji can't do much to him outside of his ultimate. Zarya's beam goes right through Genji's reflect, and D.Va is probably the only one who might have slight issues out of the tanks honestly.

I play Zarya all the time... I want moar Genji's. Jumping and double jumping just isn't hard to track IMO unless it's right on top of your head.

Shields do wonders on your supports giving him the option of not hitting, or hitting and charging me up who is coming his way. Even more so when his ulti is on. Most will happily give you 50 energy for a possible kill.
Hardest hero to kill in general is Tracer
He's almost as bad, especially if his sword strike's up, but he also (now) doesn't deal quite as much damage as Tracer can deal over time; Genji's brutal in close range for getting a kill or two on some lowbies, Tracer's got the oomph to take out a tank, especially if it's just the tank and a healer at the strong point.
I've had the unfortunate luck to be on the receiving end of a good Tracer a number of times. Luckily I tend to be playing McCree when they show up, so I can put a stopper to them before they destroy us too hard. But when I'm not, they just kill the healer(s) and disappear without a trace for 20 seconds until they kill our healer(s) again.
Being a healer in this game in general just sucks.
Especially with me maining Mercy. Everyone thinks I have a revive constantly on hand and that I should know the magical moment in which to pop it. Even though I can do an entire team save and then get wiped by a Zarya ult immediately after. You get shit on the hardest of anyone...
...and then have the joy of dealing with all of the flankers Blizzard so lovingly crafted. -_-
That said, still have a 73% win-rate with her. In fact, most of my losses are when I'm not playing her. I pick Lucio for the KotH styled game-mode and he's also got a high win-rate for me but if people pick either I tend to be at a loss. xD

The nerf to Genji did absolutely nothing to change his playstyle. The only people the nerf affected were people who were bad with Genji. A good Genji will always stay back, hit lmb at distance, and pick off people who leave cover at close range. That has always been his shtick.
He is still countered by McCree and Roadhog, and he is still weak to Torb, Mei, Winston, Reinhardt, Zarya. Really the only people that have to worry about Genji are backline healers and Junkrat.
What I do notice now is the only people who use Genji anymore are actually good with him, but since before the nerf the majority of Genji were bad players, no one bothered to counter him. People still don't bother to counter Genji because they assume he will be bad.
What? No. No no no. This was NEVER something people had any issue with. He's a pretty meh poker. If you want someone who can pick people off at mid-range, Soldier 76 and McCree will both be FAR better at that than Genji.
The issues people had with Genji were his animation-canceling melee burst for 150+ instant damage. More if you headshot the shuriken; enough to one-shot most 200 health heroes. That and his ultimate, which seemed to be way too long. That's why those were both addressed, and his poking was left alone, because his poking is not a strength. His shuriken have a travel time, so you can't aim them accurately past short range to reliably headshot people (unlike Soldier 76 and McCree), there's three per long-range shot that are fired in succession, meaning against a mobile target, you're likely to only hit with one or two at range, and so forth. He can burn down shields, like pretty much any hero, but he's not spectacularly good at that compared to anyone else.
If that's how you're playing Genji, just play McCree instead. You'll be far better at what you're trying to do.
Sym is amazing at killing bad Genji's, and there's nothing I love more than watching a Genji try to deflect when I have a beam on him (Either as Sym or Zarya) and just watching the panic grow as he gets more and more eratic
I love playing Support. But yeah, people asking for ress when you don't have it is so annoying..
...or expect you to use it every time a single person drops.
All I like to do is heal, in just about any game I play. That's always been me, I like to shore up others weaknesses and make them better. Give them room to excel.
Damage ends up being too much of the "alpha male", "big dick" mentality that is just so unappealing for someone that is transitioning like me. Tanks are a bit better but I prefer the more effeminate grace of a support role. Always have. Hence my adoration for a winged, haloed character that brings people back from the dead. It's too grand for me to ignore!

Even in Battlefield I played a medic class every time.
League of Legends I was Sona.
Heroes of the Storm I was Auriel.
So on and so forth. I actually get cranky when I don't get my heal on. Especially in competitive. >:
You are pretty much alone in your assessment of Genji play. Pretty much all top comp and tourney players echo how I say he gets played.
I'm not saying stay in the stack for a long time, I'm saying you stay in the stack until you get a chance to pick off a character, then you go pick them off with dash, dash combo, whatever, then you see if there is another pick off, if there is you go for it, if not you return to the stack or friendly lines, however your team comp is running. Before you dash in you should have in mind what 1 or 2 people you are going to pick off. People complained about the nerf to his mobility, not his burst, he still has burst damage, that's high. The change to the animation cancel combo barely changed his damage output, instead now instead of a quick 3 button press while standing still, its a 2 button press with an aimed dash and a melee.
Because of QP and low rank CM, people think flanking characters go off on their own for extended periods of time. This might work with crappy uncoordinated players, but not so much with coordinating teams. The nerf to his mobility was to stop bad players from playing him in a manner he was never intended to be played against other bad players. The change to the animation cancel combo was because it was never intended to work that way and gave too much ease to bad players again to have a quick 150+ burst.
Genji does well enough in the midrange that while not a strength or purpose of the character, it's not a weakness. It's where he spends a fair amount of time during team games, and he can be rather damaging with head shots.
Genji is picked for his back line pick offs because of his close range burst damage. Part of that is his mobility. But when played properly his mobility hasn't been changed. He can't make some fancy jumps anymore because of the loss of his triple, but it's no killer. And really only affected the lone wolf Genji which isn't the purpose of him.
I never really stated he was meant for midrange play style. But he can do it, within team comps he needs to do it. He can disrupt back lines pretty easily with quick 1 to 2 pick offs when he goes in. But these pick-offs are set-up in the midrange.
I think where we are getting crossed is people assuming Genji immediately dives in, he can't he dies way too quickly. He stays back, pokes, builds a little meter, then dives for kills.
Same concept applies to Genji that applies to Roadhog. If you can't kill on the dash/hook, don't do it.
