If our goal is the defeat of the Old Gods and the Burning Legion, why do both the Alliance and the Horde have members that can wield fel and shadow magic?

    Fight fire with fire.
If what doesn't kill you, makes you stronger. Then I should be a god by now.

Void slaves. They are using enslaved forces of void lords. How is that a bad thing for them?

The Legion has always employed void walkers and other void creatures - fighting fire with fire as has been said above. Much the same way Illidan and the Demon Hunters use the Fel to fight the Legion on their own terms.

Aren't void walkers a grey area? I know they're demons my warlock summons. They are also considered demons by various out of game sources.
For the Alliance, and for Azeroth!

They aren't demons. Blizzard said they are only being considered so for gameplay reason.

How do they summon them then, since warlocks only draw from the twisting nether.

The Nathrazem spent a great deal of time studying a world infested with Old Gods and their minions before the formation of the Burning Legion. Its likely they were able to use their research to learn how to summon said creatures, and since Warlocks learned their arts from the Burning Legion, by extension that means they could likely summon some creatures of the void.

warlocks and the legion are known to use shadow magic and enslave void creatures since literally forever.

    they were never nether/fel only.

The dimension of the Twisting Nether is itself full of Light and Void energies in a never-ending roiling chaos - even if they were restricted to the Nether (which isn't in evidence) they would still have plenty of Shadow or Void energies to draw upon.

Well actually you need a light to cast shadow, so chances are these are all holy spells cunningly disguised as shadow spells. It's like making shadow animals on the walls with your hands.
