Now, I've been heavily into building computers and stuff in the past - but I'm not really up to date and caught up with recent technologies. Therefore I'm just positing here to get some feedback, possible changes to the build etc etc.
change the PSU to a RM/Rmi model and you are good to go.

The Corsair h100i v2 is a really good choice and in some test it beats the Kraken x62. They are in range of 1-5 degress in test. But as others say, the stock fans are loud

The Kraken is around 5-10 degrees cooler @ load; http://www.gamersnexus.net/hwreviews...se-temp/page-3. That's a big deal. I've had two h110i v2 and they both had loud pump vibration noise and really loud fans. No reason not to get a 280mm radiator when it fits in the case.
Also, for 50$, get the TX550M, and don't worry about it for a second, it's a good unit.

Wouldn't it be better for the OP to wait for Coffee Lake?

There will always be something "better to wait" for. So no, not if there's nothing officially confirmed about release date and specs.

He can go for Corsair if he likes, but then it would be stupid not to go for the 280mm version.
