gladiator stance Warrior. ability to tank or DPS without having to learn a spec you don't enjoy or carry extra equipment... suddenly more people enjoy warrior, more people are tanking, queues are shorter... so of course blizz delete it
sure it was a tad unbalanced, but the usual answer to that is to address the imbalance rather than delete an entire specialisation

Cata (DS) shadow priest. Synergies that really matter everywhere.
TBC feral tank/dps hybrid, WotLK holy paladin, late WotLK frost DK tank, late Cata (post FL-nerf) elemental shaman, MoP disc priest, WoD blood DK, WoD pre-HFC surv hunter.
And then there's some specs that I definitely don't miss, like WoD shadow priest (dotless dot spec, what were they thinking??), MoP holy priest (I'm so glad chakras are gone) and WoD balance druid (that selfmoving balance bar, ugh).

Disc got damage->healing when monks first were released (I did very little active healing on most bosses in MoP with damage taken increase as a disc priest... and there were a lot of them!), so I wouldn't really say they got to take over the monk mechanic, more like they got their old mechanic back.

MOP Guardian, and pretty much every tank(except DH) since vengeance was removed. They got rid of fun stuff like the emergency use bear hug, tranquility, innervate, that, in my opinion, was the last time that Frenzied regeneration was a good healing spell as well. I still love the guardian, has been my main since I started playing this stupid game.

2hand Frost DK with Sindragosa's Breath and Conversion was also pretty fun while it lasted.
Edit: looking at these posts Blizzard really needs to bring back MoP and old Demo locks.

MoP and WoD demo warlock for me. Notably while Dark Apotheosis wasn't a spec, I was one of those "would love to tank as a warlock" people. I adored it in the short time it lasted.
As a side note - MoP destruction warlock. It was broken in a lot of ways, but it's the only time I've liked destruction since BC. The only reason I loved destruction in BC was because I was into big numbers then. It wasn't terribly exciting, but MoP destruction was genuinely fun to play.

Gladiator was fun and viable for like what..... 2 months max? Then noone used it, that's why Blizzard got rid of it. Simple as that.
I am not against Gladiator as concept, but it's almost impossible to balance a hybrid spec.

They also removed a lot of fun by removing almost all rpg aspects of classes.

Being GCD capped as Enhance shaman in Wotlk was a ton of fun.
Being an insane burst machine in MoP was a lot of fun, with 11 different CDs that all stacked.
I've no idea what to write here.
Frostfire spec was nice for Naxx and pvp at the time, i miss it. Ele Shaman where you could cast lightning bolt on the move, made up for lack of mobility and made them somewhat fun in BG's. I miss tanking on Frost DK too, was pretty cool concept to have a dual wield tank, was certainly more fun then blood.
