"The first val'kyr was Helya, a titan-forged sorceress who was the adopted daughter of Keeper Odyn. Odyn, having disagreed with the creation of the Dragon Aspects, offered vrykul warriors who died in glorious combat to become part of his Valarjar. To take the spirits of these departed vrykul from the Shadowlands and into the Halls of Valor, Odyn transformed Helya into a val'kyr, against her will, which would ultimately cause her to rebel against Odyn with the aid of Loken.

The Scourge val'kyr were described as warrior maidens of old and each was the greatest warrior of her generation. They are sisters who served the warriors of the north in life, and chose to continue [their] service in death.

The original val'kyr are ascended vrykul warriors of the Valkyra, who prove their worth to Eyir in order to become val'kyr. As val'kyr, they take worthy vrykul warriors who die with glory in battle to the Halls of Valor, where they will feast and battle for eternity as part of Odyn's Valarjar. Val'kyr are considered "sunborne" when they are honored in the presence of Odyn.

Spirit healers are val'kyr who, siding with neither Helya nor Odyn, chose to remain in the Shadowlands to aid unfortunate adventurers." - From that link Maxilian shared.

The val'kyr were created by Odyn to carry the souls of his dearly departed Vrykul to the Halls of Valor with him. As to why they're only women, you have to remind yourself that Blizzard is adapting Norse mythology into the game with a their own twists. The original Norse had warrior women like the val'kyr protect viking spirits as they made their way into Valhalla. They merely didn't change it when they adapted it to WoW. I'm not sure if there is a lore reason as to why they're only women.

As to why Val'kyr are only women, gods of a pantheon usually have humanlike personalities, so as Odyn is made from Odin, it's probably as simple as that he likes the ladies.
Now you see it. Now you don't.

I know all details of valkyr storie but I always get confused about how lich king can turn a northrend vrykul into a valkyr. How can this process obe done by lich king?

Note: This happenes in utgarde pinnacle dungeons.

Why Arthas had Val'kyr was never really explained. Maybe he initially found and enslaved one of Helya or Odyn's Val'kyr and used that one as a template to create more from the Northrend vrykul.

The Kvaldir were present in Northrend by Helya wasn't part of the lore yet back then, neither was Odyn.

In that case LK must be immortal cause when he dies a valkyr of his own can sacrifice her life to bring him back (as in sylvanas).

To help out with Eyir... People have also missed out the Norse God that she is and actually linked to Odyn too.

In Norse mythology, Eir («help»,«grace»,«mercy»,«protection»,«calm».) is the goddess associated with healing. She is known to be one of the handmaidens of Frigg, who is wife of Odin, the king of the gods. Eir is the healer of the other gods and goddesses.

She was also known to resurrect the dead, in Warcraft's case - make Val'kyrs like Hryja in Halls of Valor. Of course, we have not much idea as to why Eyir and Helya are different. One appears to be in full Shadowlands glamour and the other in radiant Holy glamour, there's also val'kyr of both sides still. The relation to Helya being the first Val'kyr and Eyir being a potential perfected form is apparent though with the lantern Sylvanas was using on Eyir and turning her skin crackled blue, I wonder if Eyir can be reverted back to a Shadowlands glamour look.

Come Chronicles Vol. 3 we may know as to why Arthas managed to raise his own Val'kyr, that does depends on its depth and how far it manages to go so may go into Vol 4. however, I reckon he was tapping into the Shadowlands too or something of that nature - Arthas could use magic associated with Death, Shadow, Frost and Decay really.

He did rise Sindragosa out of the ground and animate her really and though it's necromancy, he was using Old God poo and such in his arsenal. It's nothing that unbelievable if you look at Lich King's overall picture, prowess and capabilities.

He could easily raise the Val'kyr in a similar manner to Odyn did just he had to choose female vrykul rather than compared to Odyn who could transform a Titanforged in it's original carnate. Or, he could have forced them/persuaded them to join from the Shadowlands forsaking their neutrality or from stole them from either Eyir, Odyn and Helya.

Another question about Sylvanas' Valkyr: Who sent them to Sylvanas? Eyir herself? Odyn? Or were they some sort of Valkyr with free will? After recent spoilers it may even be an old god related thing to send those valkyrs to sylvanas and ress her so that she could serve their cause. Anyone knows the source of those valkyrs?

Well, they convinced Sylvanas to become their "master" after she committed suicide after WotLK and before Cata, they kinda guilt-tripped her into this pact, lol.

Val'kyr wanted freedom, but they needed a suitable vessel, so they chose Sylvanas to become one. Now they're free of LK will, but their souls are bound to her

There is a low questline about that.
Sylvannas calls garrosh and shows him the valkyrs she stated ex agents of the lich king that went unemployed. So After Arthas died she jumps from atop the frozen trone and one of th valkyr brings her back to life. Slyvannas saw the hell she will find after her death and did not want to be there so she hired them.
