Feels like ive been doing the training missions for days now, is there a way to track how far along you are?

I think the Intro To Husbandry achievement tracks it. There should be a x/6 counter next to each mount type.

You can tell by what target/what mounts you're currently on, if you're talking about the training missions and not the accompanying achievements.

Ya im talking about the go kill such mob missions

WowHead has a table set up, can look and see what missions you're on and how many you have left.

No need to track just keep doing them until you get the mounts... then delete stables for something else!
