Im very curious what you guys think would be a good combo for the proffs of the monk?
So far im leaning towards Tailoring + ???
I just wanna farm ahead of time and get everything ready etc...

Since monks will be an Agi class, I would say skin/lw, you can make your own gear, plus get the crit from skinning and the linings from LW. Tailoring would be for the healing aspect of it I suppose, but personally skin/lw would be the way I would roll.
Well knowing that they will wear leather, i would say Leathorworking and skinning.. or possibly even Inscription, since you can make fist weaps. Hoping they will add new and better ones, making inscription a more viable profession.
Why do we only travel outwards in space? Lets try going up or down.

Why wouldn't you go LW since they will be leather wearers?
You'll have to wait and see what the benefits are for the profs in the next expansion since they won't remain the same as they are now.
Best proffesions will be what you like the most, since there is no "best".
level it as skinning + lw, once u hit LW cap, drop skinning and have mats ready to reroll for BS/JC/ENCHANT
I'm going to go BS/Mining on mine for levelling, at max level, drop mining - either for JC or Engineering... engineering if some sweet stuff is added. I'll be making sure I have the mats from mining before I drop it so cost should be minimal (and mining gives exp too so every little helps whilst levelling.)
the crit from skinning might not be so bad, though.
For leveling characters its usually the best to pick two gathering professions. These you can easily level up why levelling your character. You can then switch one or two of those for a crafting profession at lvl 85/90.
Edit: As Shamanic above me said, gathering profs (herbalism and mining at least) give experience, while the other professions (currently) do not.
Leveling goes so fast these days, that you usually level your character much faster than your profession. You have to stop leveling to farm mats to keep your crafting proffesion on the same level as your character level, which means it takes longer to get to max level. Also the gear you can craft while leveling is pretty useless, especially if you are a long time player when you should have heirlooms for most slots.

Atleast for high lvl, i dont see any use in tailor when all 3 specs of the monk is gonna use leather. Go LW - JC/Ench/Insc is most likely what im gonna do.

On topic, remember that at max lvl all proffs kinda balance it out save a few exceptions. Let's not ignore non-armor making professions like alchemy or jewelcrafting. Plus I think those rolling skills might mix well with some engineering perks. Forward roll over a cliff and parachute away!
same 2 profs as every other toon i play a bunch, eng ad alch. eng for fun/tools, alch for 2 hour flasks/bigger heal pots/another xmute toon. dunno why people put JC on their toons they play a lot, the stat boost isnt really worth it imo, plus its boring. i just hop on my jc alt when i need gems/do the daily.
I'd probably go Eng/Alch, or Eng/Insc.
I love Engineering, and hate playing without it. I might even decide to twink my monk at 59 with my stockpile of Arcane Bombs, Frost Grenades, and assorted other goodies.
Weeelllllll if you're like me and are a glutton for punishment or in this case spending gold I'd go with JC and LW or maybe even Eng or BS. Pretty much all crafting profs provide equal bonuses atm the only bonus LW would have for a monk is to make their own gear.
Hard to say, I am going to wait and see what perks each profession will have in MoP before I decide anything.
Most likely going to be healer specced, but will also try tanking.
Havent liked tanking with any other class so far, hoping the monk might be diffrent and acctually fun to wank with.
It's entirely dependent on what you want the Monk to be: an alt, a main, a Tank, a Healer, a DPS? And which professions do you already have access to?
If you're switching to the Monk as a main, then it'd be a great idea to get two crafting professions. They generally provide the most flexibility and the better benefits. Good professions would be JCing, Blacksmithing, Engineering, Leatherworking, Enchanting, and Alchemy. Some of these are better for certain roles (Alchemy isn't as good for Tanks, for example).
If the Monk is just going to be an alt, then get the professions that best complement your existing stable. Gathering professions are great if you don't have them already. Enchanting, Alchemy, and Jewelcrafting are brilliant professions to help cut down on raiding costs (or at least make it more convinient to get new enchants/flasks/gems).
Or, you could already have every profession available. In this case you may as well double up on the useful ones: Alchemy and Jewelcrafting. Alchemy for more transmutes (and a different specialisation), and Jewelcrafting for quicker access to recipes (due to the daily quest limitation).
In short, it's dependent on a few factors:
-Is the Monk going to be a main or an alt?
-Is it going to tank, heal, or DPS?
-Which professions do you already have?
The answers to those three questions will decide which professions you should go for.
If you aren't a dedicated raider, I'd suggest blacksmithing and leatherworking.
Blacksmithing because weapons are hard to come by usually as they don't allow them to be bought with JP/VP (could change in MoP).
Leatherworking because of gear again.
If gear isn't a problem, then it doesn't matter. Blizz made all the non-gathering professions provide the same stat buffs (on average in the case of proc/CDs) and will likely do so again. Chances are inscription would be a good choice if you just want to get maxed out as fast as possible and gear isn't a problem, because you'll probably get to avoid a long boring rep grind for your shoulder enchant again.
