really, what kind of issues?64GB will just run you into issues.
This is how my 64GB look at the moment, and its not like its a fresh installation. Its like half a year old as you can see on some of the folder dates.
I disabled System Restore, Hybernation and other "useless things", I set the pagefile to 2GB, since I have 8GB physical RAM anyways.
I must admit that I clear my TEMP folder now and then + Temporary Internet Files, and go delete all the quicktime downloads that APPLE store. Basically if you keep an eye on what it actually is that you randomly get stored on your HD and clean up once in a while, 64 GB is just fine.
As mentioned I put all my random stuff on the 2TB HD, like WoWPTR, still have like 800GB space free on that one after 2 years.

I've always wondered the opposite, why people insist on putting W7 on their gaming drive (SSD's are nothing but!). W7 isn't slow, I'm AFK when it's booting, and opening programs doesn't take many seconds, even when multitasking. However every second during loading screens is a second I'm not actually doing anything. At all. It's not even enough time to pick up my guitar and play something while I wait. Just enough time to pick it up, put it in my lap, and then put it back.
You know when you go check how much time it's left on the dishing- and/or washing machine and realize it's like ~10 seconds left, meaning it's not enough time to go do that other thing you were doing in the meantime? It's like that, dead time. Idling doing nothing, waiting for something to happen. Only with games it occurs repeatedly every single gaming session. Over and over. Time and time again. W7 only boots up once. Any program you're loading can be loaded in the background while doing that other thing (like slaying dragons!). A loading screen locks you in place, especially if you can't play in windowed mode or the like. Don't bloat your gaming drive with your OS.
The reason that I use my SSD is because I want a quiet computer.
If I put my system on the usual SATA 2TB HD that HD would have to run 24/7 together with my computer. This will generate a lot of heat inside my case and I would have to turn my fans higher. My computer is build around being very silent so that is unwanted.
As it is right now my 2TB HD only turns on like once a day, sometimes even just once a week (I've set it to turn off after 15 min of idle) when I need to move some stuff to it to free up space on the SSD system drive.

Because if you can afford it, with prices on SSDs today, there is no point in not putting everything you can on it. 64GB you need to be a little more selective, 128GB will fit almost anything (of course not movies etc.) Why would you slow your system on purpose? With an SSD you can still go grab a drink while you reboot, it's just giving you a choice now.

I've only put WoW and Windows 7 on my 60GB SSD, meaning I have ~20.2GiB to spare.
However, I would not recommend anyone buying a 60GB SSD if you have the slightest intention of putting Wow there. It's just too much headache on the cleaning.

Either wait until you have more money, or don't go SSD at all. It's not a must - it's a luxury item.
I went from OS on HDD to SSD and back to HDD after the boot time improvements weren't anything to write home about. Now I just keep WoW on the SSD.
Also, Skyrim load screens only last about 2-3 seconds for me... on HDDs. Putting it on an SSD IMO would be a waste of valuable SSD real estate for even less of a gain than most things.

Only reason I have a 64GB one is because I bought it 2 years ago, back then anything larger costed more than Tiger Woods yearly viagra budget.
If I was to buy a SSD today I would definitively go for 128GB version for System+Games and programs. Not that I really need the space as it is right now. But you can be more sloppy.
Personally I like to clean up my SSD now and then, its more of a hobby than out of need. So my conclusion is that 64GB is fine if you are on a tight budget in this dreadful world economy

My Skyrim takes up around 5.5GB of space, WoW 35GB (a lot less if you install a new client) and my Windows 7 20GB. If you are planning on having more stuff than windows on your SSD get an 128GB or a 256GB then.

Do you have marvel-controllers and eSATA ports on your motherboard? :P
My desktop does. And it almost takes me 15seconds to boot up -.- My notebook takes less than half of that, with a significantly enough slower SSD.
Yes, but they were disabled at the time. I use the eSATA port now. Still wasn't enough of an improvement to warrant the constant, irritating drive maintenance of a piddly SSD. Especially where I don't shut down often, and if I do, it's fully booted by the time I have my morning coffee brewing.
I do like the SSD in my netbook though, that boots nice and fast so I don't have to use sleep and waste the battery.
