What I always LOVED were actual wings on your character. I would LOVE to, instead of mount up, grow wings and fly through the sky. If blizzard ever decides to such "mount" into the game I will stop at NOTHING to get those wings...!

I always felt like if the pet was the right size and shape, a hunter should be able to use it as a mount. This would bug a lot of non-hunters (I don't even PLAY my hunter) but it would be really awesome. On the same note, a felhound my warlock could ride would be pretty much the best thing ever.

How about a Klaxxi warrior mount, it would be identical to the dive bomb NPC from the Klaxxi dailies. I thought that'd be a sick rare mount for heroic Empress or something.
