Yeah if you want to know the lore inside and out you should definitely check out Knights of the Old Republic 1 and 2. I also found a couple of the Old Republic books pretty good too. Currently I am reading Star Wars Old Republic : Revan and I find it great so far.
At least then you can appreciate the characters you meet.

with skyrim and other games i probably only have time for 1 of the two so do you have a suggestion? its just been so long i can't quite remember which one is gonna be more relevant

If you want in depth lore, then it'll help. Though it's not necessary at all. The wikis can fill you in almost as much if you want to just read about them.

start with KOTOR I, then no doubt you will end up playing KOTOR II regardless of whether or not SWTOR is out by then.

Only play KOTOR 1. They retcon'd most of the KOTOR 2 Lore so that it didnt happen.

It is not needed, however if you do you will have a greater enjoyment of some of the story/quest arcs. You really only need to play the first game since most of the second game is behind the scenes changes to the galaxy.
