Would an Intel i7 920 2.67GHz bottleneck an nvidia geforce GTX 570?
I highly doubt so, I'm not very experienced with the 1st generation i7's. My 2 cents are the bottleneck will be very little.

The 920s are eminently overclockable, and you won't come across anything short of BF3 on multiple screens that'll give you trouble - and even then all you'd need is a second 570. Even on stock, it'll be fine with one 570.
If you're going to overclock it, you'll want a decent air cooler, or something like the Corsair H80/H100. It really depends on how high you want to take it.
