I loved melee dps in most of the MMO's. I want to play the Jedi Order, so what class should I pick and what spec etc.

on the knght side, both will be meele dps Sentinel is dual wielding pure dps and Guardian is Tank/DPS both are balanced it's a playstyle issue. if you're more roguey, go consular and pick Shadow

Either a Jedi Knight, AC or tree doesn't matter as long as you don't pick defense or the Jedi Shadow's Infiltration tree. The Balance tree maybe too but I'm not too sure about that one.
