Here's my UI, still a bit of a WIP. Not happy with the DPS meter layout/positioning or the DeadlyBossMods settings. Also there's a few minor graphical things to sort out.
Slightly modified JarmyUI with additional AddOns.
My UI looks like this. I like my cooldowns to be not only numeric, but with bar graphs as well. That way you do not have to read into them in the mid combat. Everything is visible with side vision. Also, for the same reason, my cooldowns are just below the center, as well as health and focus bars. Enlarged minimap (I do a fair bit of herb farming and standard size minimap makes me want to get a microscope), range indicator in the lower left corner (glows green when in range, red when outside, easily visible with side vision), target health % as a separate addon (useful for MM but otherwise lackluster).

It might need some fixing in pos if your resolution is below 2560x1440.
I did some lua editing to change the direction of player healthbar too. You will need to edit this file Elvui\modules\unitframes\units\player.lua

Here's my current UI. TellMeWhen provides the icons and focus bar in the middle. The icons each have a color they flash to get my attention. Stuf and Grid for unit frames. Almost all the other bars and icons are Raven (the narrow red-orange bar is Vulnerable). Consumables bar is Bartender with my own Masque skin. After seeing stokbaek's UI, I think I need to make some things smaller.
