Hmmm, I was originally leaning towards a Shaman. But a Warrior would be pretty good fit as well.

Definitely a warrior, aye. Get the Bulwark of Algalon to look the part.
Though if you use a rogue or a caster that mainhands a dagger, you can use the star-dagger model from Ulduar to even look the part, too.
