So far no spikes glo, I did get the choppiness already in the video at one point, the graphs didn't show anything. About .5-1% CPU usage right now. Going to continue watching and if I get no spikes then it is certainly nothing to do with the CPU.

Okay so it's not a system interrupt but something is spiking, I noticed. A little red spike shows up from time to time, sometimes there's a couple chops in the game when this happens - sometimes not.
While I don't think it's part of your problem, the 64-bit client was available the day after the latest patch. It's available here.
So since I got the 64 bit client of WoW, things have improved, to a much more pleasant point. At least half of my time or more on youtube now has no occasional chops and WoW was definitely doing better, with choppiness happening less, as well - however I've not been playing WoW much over the past few days but youtube is still important. :P Hopefully things continue to improve! ^_^

Okay interesting thing I've noticed....
I should not have made that last post without knocking on wood.
However here's the thing, it's not doing a chop chop anymore (i.e. two chops in quick succession within about 1-2 seconds)... it's now only doing one chop. O_o (i.e. 1 chop and then all good)..
Still, bloody annoying!
Quick update...
I recently flashed my motherboard's (Asus P8P67) BIOS from 2103 to 2303, and the issues have gone away, with also a bit less screen-tearing than I had before, albeit it is still there, just less. I'll keep you guys posted on any other updates, I won't be reinstalling WoW for any reason, especially after this happened.
