Would be interested to see if theres any information/videos on other races as monks, and thier animations. Specifically, Tauren?

Available to all races I think. In WoW Insider one of the writers played an Orc Monk in beta.

its available to all the races but the quests for some reason are a bit messed up. I am working on a night elf monk right now for S&G
