Steam alone currently has over 1500 games with singleplayer, 285 if you only take games with a 80+ Metascore. be more specific in the genre you're looking for, so we can be more specific as well.

I would suggest Dragonage: Origins or the Mass Effect series. Or hell, get SWTOR and play it as if it is a single player game. If it hooks you, you don't have to level up again in your new MMO.

I've been playing the hell out of Fallout New Vegas. I've also been playing a lot of Portal 2 and Bastion. Any or all of them are a great way to pass the time.
