Nephalem Valor is only obtained once you reach level 60, and only stacks up when you kill a full pack of Champions (blue named mobs) or a Rare (yellow named mob, usually with minions). Purple named mobs such as Unique mobs and bosses don't stack the buff. Each stack gives an additional 15% Extra Gold and 15% Magic Find. Stacks to 5, lasts 30 minutes since the last stack was applied, and disappears if you leave the game or swap ANY skills/passives.

I'd like to do that..
Problem is, I have too low DPS to kill the Butcher without changing a few of my abilities. But if I do that, I can't take down the specials! :S
So for the moment it's either or.

I have the same issue tbh, As a barb with 1h +shield my dps isnt high enough to kill him before his 'enrage'. What I do is grab my 2h until the enrage and then swap to my 1h+shield for his enrage phase, and just scratch him to death >.<. (Usually enter the 3 min mark around 30~40% health..)
Health wells + high resist helps
