SNES rpgs are full of win. The FF series on snes and of course chronotrigger. I don't know if you count the zeldas as rpgs - because they are more action/puzzle oriented - but those are in a class by themselves for entertaining and addictive. I hear good things about the FFs for PS1/PS2 as well. I had fun with a PS2 rpg but I don't remember it's name - I was a japanese kid going into school as a cover for killing these demons or whatever, had me addicted for a while and then I noticed it's horrible repeativness.
Shadow hearts 1 and 2 for the PS2 are the best rpgs i've ever played.
When you go Planescape Torment you never look at story driven RPGs the same way again.

dark souls is nice
Vagrant Story and Final Fantasy Tactics are well worth a look if you're keen on RPG's with a mature, dark and thought provoking plot/atmosphere. They both have a pretty steep learning curve, though.
Diablo 1-2-3 ofc - Warcraft - Starcraft
A cheap, but good dungeon crawler RPG is Legend of Grimrock; $15 and a good, challenging game.
dot hack for playstation is good as well.
