Best professions for a rogue?

Should you go with two crafting profs (ie JC/LW) or grab a gathering prof to match up with its crafting prof ( ie Mining and JC or Skinning and LW)

if yes than you want to professions like BS/Eng

If you dont have a lot of toons and don't care about min/maxing?
than crafting/gather is fine.
