Pocket by pocket.
And because our tray is quite flat with wide spread pockets, I mostly use a spoon to fill up each of it separately.
I hold the tray at a very slight incline (just enough to make water move downwards) let the water fill the top 2 pockets, gravity does the rest.
If you fill it pocket by pocket you risk not getting Evelyn ice cubes. It is absolutely crucial to get Evelyn ice cubes.

Gravity. It takes way less time, and gets the same amount of water in each pocket assuming you hold the tray at a 45 degree angle and have an even water flow on both sides of the tray.

I scale only the most treacherous of mountains, intrude into only their most inhospitable caves, and collect from them only the most bone-chilling of ice. I then hand-sculpt these frigid monsters into cubes with a toothpick and a scalpel, and place them in my ice cube tray. I then drop my ice cube tray 1800m into a giant vat of liquid nitrogen, after which I store it in the coldest freezer available in the South Pole.
I use my ice machine. I hit the button and ice appears.
Gravity, aint nobody got time for that other way.
