Mostly because when it comes to PvP, I really need to be melee. If I play a warlock (like I did through BC and wrath) I can probably get to a 2000 something rating before my skills run out, but on a melee like a rogue or a warrior I can control them way better. They fit my playstyle.
I used to steal my RL mates account all the time because he had a warrior, and he didn't PvP at all. That was so much fun, since then I've always wanted my own warrior, but I just haven't level'd one since now.
Though, I can't play anything but warlocks in PvE. I've tried with many classes, and the only one that I can do decent damage with is the rogue, but that was in Wrath so they were quite good back then anyways.

Ziru, is it just me and my bad luck with people or do you really only get 1.5-3k souls per kill if you invade someone through the Blue Eye Orb? D:

No one really knows. Though myths and legends has been made about it.
It's said that the first one to reach 100 Seely Points gets a date with Johnny Depp. There are also some, folktales from the cold north, concerning the Seely Points. According to them they are a hidden system passed down through generations of Seely, to find the treasure of all that is Sexy™
Me? I don't know if I believe that. But I do think that there are more between heaven and hell that we can put into words... So maybe points are the right way to go...
