There is also a spot where it may not look like you can stand on, but standing there and shielding usually makes the Capra Demon fall down the stairs, setting up for a jump attack easily.

I always tried hysterically to get somehow past him to the stairs on the left side of the room. iirc I ran a little and rolled then to avoid dogs/blades that got thrown on me from every side. Once you're on top of the stairs it's much easier to get anywhere with that try.
