Well this is highly subjective so i will just put games i alway go back to no matter how bored with all others i am, to me those are the best games because they survive the test of time, the test of boredom, the test of novelty, what truly makes a game good is not its popularity, but a whole lot of things mixed in, the story, background, setting, ambiance, immersion, re playability, actual innovation and legacy, also the ability to do and create in the game.
Again, this is subjective to my own taste.

    10) WoW (i dislike modern WoW, but cant deny the impact vanilla and tbc had to me and many)
    9) Civ/HoMM series Slow paced as hell, but addictive and rewarding. One... more... turn.
    8) Total Annihilation (both that and kingdoms, the scale is just enormous, also only RTS with collision detection, if that sword/arrow didnt hit the guy, it wouldnt damage)
    7) Elder Scrolls (define a whole genre... amazing customization and openness, although that is also what turns off a lot of people)
    6) Unreal Tournament (not much to say)
    5) Arcanum of steampunk and magicka (best, rpg, ever, pity its in alpha...)
    4) Age of Empires 2 (still has a huge fanbase... much prefer its playstyle to say, starcraft, i prefer strategy to fast paced tactics)
    3) Shogun total war (and total war series, unique games in their own sense and innovated a lot to TBS)
    2) Star Control 2 (honestly the most influencial game in my childhood, its just so well done...)
    1) Black Isle games really, BG, BG2 IWD IWD 2, awesome games. (first place is hard to say, but thinking of how many times i revisited... yeah)

There are many modern games that are excellent in execution, but the majority has no impact on the player, it is not a game you keep thinking about when you arent playing, it isnt a game that allows you to play, replay and replay even more and still not seeing all of it, they are games that last 5 to 10 hours, empty, soulless.
Very beautiful, no doubt, but a game succeeds where entertainment and duration of it comes.

Honourable mention towards Turn based tactics, Silent Storm and Xcom.
    For RTS, Dawn of war/Coh.
For RPG, Diablo (Requiescat in pace Sweet prince, your name has been debased like a cheap whore and its progeny an ugly thing)

    4. Deus Ex: Human Revolution (I know longer complete games these days, as they get far too boring and repetitive, I completed this twice, so I guess it deserves to be up here)
    3. Final Fantasy 7
    2. Mass Effect (All 3 together)
    1. WoW (sole reason being, I have spent by far the most time in this game ever)

I was disappointed with Skyrim, I expected a lot more from it.

My opinion, this is based on story and gameplay, for some not both at the same time.

    (11. Monkey Island 3)
    10. Final Fantasy VII / VIII
    9. Can't decide between Final Fantasy VII & VIII, but then one not going into 9th spot would go into the 10th
    8. Metal Gear Solid 2
    7. Dragon Quest VIII
    6. Final Fantasy X
    5. World of Warcraft
    4. Metal Gear Solid 1
    3. Half-Life 2
    2. Metal Gear Solid (3): Snake Eater
    1. Final Fantasy IX

As you can see it's not a lot of variation, but some of these games I played while growing up and still play today (I don't have any playstation atm, still have all my FF copies though and refuse to sell them, my favorite series of game ever). The MGS series are just great games because of gameplay and a very very good story.
Half Life 2, great game for gameplay and takes you on one hell of a journey.

WoW... well even if many people have come and gone, I still enjoy it, maybe not as much as in TBC, but I think that's just because the game isn't new, and no matter the amount of content put into the game, it will still not make it a new game.
DQ8, great RPG, a bit different from FF, but cool graphics and characters along with gameplay.
Monkey Island, how can you not love this if you've played it?

This is by no means the greatest game ever made, just my favorite. I know some of them can never be considered one of the best ever, but I never the less I had more fun with them then some of the greatest ever games.

1: Magika, buggy as hell, yet the funniest experience I have ever had in gaming when I went through this with my mates.
    2: Dragon age : Orgins
    3: Portal 2
    4: Bastion
    5: Jorney
    6: Starcraft 2
7: Guild wars 2 (note its leveling, again must fun ever had in mmo, the leveling was in a league of its own. Shame they didnt have some great 5 man dungeons for end game)
    8: God of war 1-3
9: FFX , again not one of the best games ever made, but it was the game that got me into gaming so it has a special place in my heart <3
10: EDIT: Kingdomhearts 1 and 2 ftw , would be higher but not reorganising list
