Someone did the math and the angles, trajectories, etc once. It's due to occur in early to mid 2017 real life time. I believe GC said there'd be a world event for it.

Considering in game they don't even have lunar cycles, and there are two moons in Azeroth's sky that always come up at the exact same time and always as full moons, so if they can't put lunar cycles in at the very least, an eclipse seems out of the question. The Dragonwrath event is supposed to be an alignment of the two moons, I don't think it's an eclipse of the sun but I can't remember exactly. Either way, it's something that you can RP for, but not anything you'll see up in the sky in game. Personally I'd like to at least see lunar cycles. Crescent moons are a prominent feature in Night Elf and other racial lore, yet all we ever see are full moons.
