Most of them are simple ones. Achievements like "Swim/bike/run X distance" or "life X weight". Quests are just sets of exercises to see if you can do them, some of them are time limit related while others are just "do X Y times."

That is true, monks are a pain in the ass to hit, which is why I would put fireballs, lightning bolts, and cone of colds with my brother in the way, because he too was a monk and dodged everything.
