Shaman for thunderstorm back in wrath was amazing fun
You two nailed it as far as I'm concerned. Druid flight form for faster gathering of ore/herbs, and Tstorm to launch people off lumbermill and eye of the storm flag. I suppose a distant third is monk, just cuz I thought jade lightning looked so cool.

Just leveled my Shaman for Elemental Blast to go Elemental. Hit 90 and went Enhancement, taking Unleashed Fury instead and having way more fun
Priest, whom I created in vanilla but didn't level passed 10, in BC for Circle of Healing and because undead look badass in priest gear.
DK for Death Strike, I liked the idea of active mitigation as a tank.
I also leveled a druid purely for flight form gathering :P. He was my first 90 and he is still sitting in green gear because all I do on him is fly around gathering lol.
Leveled a rogue 'cause of shadowstep.
I mostly leveled my warlock just for metamorphosis.

Yes and no. I made a rogue back in bc because I wanted to play around with a sneaky character in RP. So I made the character for stealth. Ended up having so much fun with the class that it was my main from late bc through wrath and cata, until MoP where I made a monk.
I always play a sneaky character. So i guess stealth?

There are lots of classes where a particular ability is especially appealing to be, but I've never leveled a toon for a single ability as the sole reason. They'd have to also be enjoyable to play and have other positive features.
I am thinking of dusting off my warlock because of the ability to get a beholder pet. Beholders are fucking adorable. But again, it better have a lot more goin' for it then just a cute pet or I will lose interest.
I only play a warrior because they have Charge.
