Which one do you think has the more difficult learning curve and why? I'm looking at rolling one of these classes specifically for PvP. I was thinking Spriest would be easier for me due to the DoTs but not sure if Mage and It's CC would be better. Also for me, less buttons is much better than more.

Mage is more difficult because the Spriest learning curve is a joke.
Just choose spriest and melt faces.

If I was a PvP priest I would much prefer to be disc.

Spriest doesn't blow anyone up. The spec is good for grinding people down while they try to reach you and then a teammate blows them up.
Frost and Fire on the other hand can blow people up.
