Aff and destro warlocks have too much casting time spells, destro is even worse. Demo was perfect because its all major damage abilities were instant.

Check out the Kil'jaeden's Cunning talent. Casting time doesn't necessarily mean immobile.

Hunters give no raid utility and are not even top dps so they are not wanted in raid.

Hunters bring tons of raid utility. In addition to bringing pretty much every raid buff in the game, they also offer add control in the form of Misdirect and slowing traps. Considering the large number of add fights in the current tier, that's quite useful. Aspect of the Pack also tends to come in handy from time to time (though nothing in the current tier comes to mind). Good mobility and a strong defensive cooldowns also lets them soak various things.
