I have not done pulls on Siegecrafter, Klaxxi, or Garrosh heroics yet. Everything up to Thok is pretty easy mechanically. Even Thok is easy, it's just a big cooldown coordination check.

I only do 2 days a week, but this is what I feel like, a boss like Immerseus is extremely easy, but it's kind of like Jin'rokh in that it's easy for a couple of people to die to personal errors, the harder part starts on Malkorok, while the fight isn't that hard, there is a DPS check and it's easy for people to fuck up. Spoils could honestly be placed further down, we could have killed it on half the amount of pulls but one group was slower than the other

I would say for 10 man

Norushen>Protectors>Pride>Immerseus>Galakras=Nazgrim>Iron Jug>Shamans>Malk from personal experience.

Immerseus just has so many things that can wipe a raid due to one person screwing up, Protectors is a heal check in entry level gear(healed in my os at 530ilvl at the time, but lolshamanstackedfight), Norushen it pretty easy in general, stack and heal send your best dps down first once they are all purified just dealing with one add every 10% is extremely simple.

Honestly I would not skip sha. Do them in order. Of the ones you mentioned Galakras is the easiest.

For 10m, they're basically linear. The first 8 are all easy enough that it's not worth differentiating them. Even people just now progressing on them should be able to get more than 1 new heroic kill per week, so no reason to skip around. The remaining 6 are almost linear just with Paragons being a bit easier than Blackfuse.

The only weird jumps are Norushen (really easy both before and after nerfs) to Sha (somewhat challenging; still took us barely 10 attempts though) and Blackfuse to Paragons (Paragons definitely easier).

Would figure the same to be true in 25 man as you can stack insane amounts of external cds on the tank.
