So I missed our 25H Immerseus kill this week, but I was in for Heroic Protectors then a regular mode clear after that... Am I still able to find a group for Heroic Immerseus later or am I screwed for the week?

You can not go backwards in terms of boss kill. By joining the heroic Protectors group you locked yourself to have already killing Immerseus for the week. As for heroics in general you can only continue doing heroic kills for the week with the unique id you currently have, meaning you can't join a different heroic group.
