Well, I personally wouldn't take mining or herbalism due to the fact you get a mining building and a garden building as well. From what I've read, you get more than enough materials from your garrison buildings to compliment whatever you need ore or herbs for. I'm just sticking with the two professions I have, JC and Engi, even though Engineering has pretty much taken a hard hit in terms of being able to use stuff in a raid environment. Can no longer use the Goblin Glider DURING a boss encounter and the Nitro Boosts now share a CD with the DPS pot. JC seems kind of meh too since gem slots are gonna be pretty rare, but I really can't be bothered to grind out another profession. I say just learn what you wanna learn, unless you're raiding in a cutting edge guild it shouldn't matter too much what you take. I do think having an armor profession and a consumable profession (like alchemy) would suffice.
