    No you don't. If I recall, the last case of Trich in the US was well over a decade ago, and it was from game meat.

    Cured and smoked bacon is perfectly safe to eat without cooking. I wouldn't, personally, greasy fatty texture.

    Could be. There are ways to deal with that. For example, "sushi grade" fish is usually frozen. Kills parasites.

    The USDA itself a couple years ago reduced recommended pork cooking temperatures from 160F (well done) to 145F (medium-well). Specifically because of the lack of Trich.

    I like it and I'll eat it if it's in my food, but I don't go out my way to buy or eat it. I generally stick to lean chicken for my protein intake.

    Tho, if you are a pork lover find your nearest Mangalica Pork retailer (it will cost you some extra), for you'll be in for a whole new taste ride.

    You haven't had pork until you had Mangalica.

    Jamon Iberico especially made out of Mangalica is two hundred folds tastier then bacon. 300x folds! Over 9000 folds.

    Bacon is good, Deer (venison) is better

    Personally though:
    chicken, bacon and mushroom pie (divine)
    chicken, bacon and spinach risotto
    carbonara (the pasta dish)
    and just in MF big sandwiches. Bacon and egg sandwich is the breakfast of champions

    On topic - Nueske's is fucking awesome.

    As far as a conventional recipe that's still cool enough to do, bacon-wrapped scallops rock.

    Yeah, not clear to me how good places make that work. Hard to pull off at home, the bacon texture tends to be all wrong (I hate overcooking scallops!). Do they cook the bacon a bit then wrap?

    Yeah. Get the bacon about half cooked, or slightly more, so it's still flexible. Save the fat. Then wrap the scallops. Then cook in some of the bacon fat.

    Make your own burger patties, chop up bacon and put it right in the patty. Result, better bacon flavour and less chewy and stringy/hard bits.
    Crapes, bacon and onion chopped and fried rolled up and tie closed with a green onion.
    Wrapped bacon around a water chessnut, honey based sauce, bake on a sheet. make more. trust me.
