The traditional MMORPG genre (EQ, UO, A'C, WAR, WoW, etc), not counting those fake games like Planetside and SWTOR that claim to be.
And CRPGs (Torment, BG, IWD, Shadowrun, etc).

If I have to say only one genre...that would be MMORPG i guess
Visual novels. Especially ones like monster girl quest.
ARPG- Diablo 2, Path of Exile, Torchlight, Champions of Norrath, etc.
JRPG: Final Fantasy, Shadow Hearts, Last Remnant, Lost Odyssey. Sadly these games don't seem to get made anymore and the ones that DO get made aren't very good .

There are 3 that I enjoy. RPGs, the hack-and-slash games made by Koei (Dynasty Warriors type), and GTA/Saint's Row. That's about all I really care to play. Bonus if they are open world like Skyrim or GTA, even if limited like Skyrim and GTA.
Stealth
By far
Story-based single player RPGs. All Bioware/Obsidian production (except for SWTOR) are my favorite games, by a large margin. After DAI, going to finally get my hands on Witcher series, very excited about it.
Western role playing games even more so if they have some sense of a open world.
RPG and Stealth. I've noticed the games I've enjoyed most are far cry, assassin creed, etc.
But for mindless fun, I enjoyed tower defense.
RPGs.

3 - Horror
It is a hard one, I do like my RPGs, but I have to admit I absolutely love big open world FPS with vehicles (which unfortunately almost only involves Planetside 1 and 2, and to some extend ArmA series).
There is something beautiful and extremely pleasing to me about vast amount of people charging a base, bullets and tracers everywhere, explosions, tanks driving past you, planes soaring high over you.
Arena shooters really just don't do it for me, it is rare I will even consider touching one.
And just screw BF, it is completely unrecognisable for me at this point; I am sad about that, but hopefully the people that do play it, like it.
RPGs without a doubt. I'm a sucker for fantasy stuff and the (in general) adventures of such games.
Top 3:
1. RPGs. I'm going to use that as a blanket term to cover MMORPGs, action RPGs, JRPGs, and so on.
2. Fighting. I'm not particularly good at them in competitive PvP environments, but give me a good fighting game with a decent story/single player mode, and I'm happy.
3. Survival horror. I love games like Amnesia.
