In Pandaria, you used to be able to buy quest gear from various vendors in the world.
In Draenor, is there any way to get that gear back if you sold it ? (for transmog purposes mostly)

No, you cannot. The quest gear might have a chance for world drop and the gear from dungeons will always keep dropping.

If you're lamenting over lost or vendored gear, you could use the Item Restore thingy to get them back.

None of the various quest sets from Draenor are exclusive models/colours. Find the item on wowhead and look for items with the same model.

You can see that there are a bunch of different items with the same model, and you can see which are the colour you want.
The other alternative is to find the transmog set of the item in question, and look at what other items fill that slot.
Example: http://www.wowhead.com/transmog-set=...-armor-recolor
You can see that under the shoulder slot, you've got the Frostwolf Scout's Spaulders, but also several other items that fit the set, which means they have the same model/colour.
Since Tailthrasher and Steamscar items are BoE, you can then search the auction house for those items, which will give you the same appearance for transmog.

Why do people keep suggesting Heirlooms? No, you didn't read the thread, you're being ignorant, he wasn't asking about gear to quest in, he was asking about obtaining gear you once had so he can transmog it, That has literally nothing to do with heirlooms.
@OP You can get most of the styles again from random drops, Not sure about everything though
