Most of visual novels can (and are meant) to be played with only one hand so they will fit your description perfectly. What are you going to do with second hand is entirely your own business.
I have much the same problem atm, having injured my wrist at work.
The 2 games that I've been playing are Pillars of Eternity and Cities:Skylines. Both easily played with mouse only.
totalbiscuit recently did a wtf review on a mouse only/voice commanded game. cant remember the name.
You can tune a piano, but you can't tuna fish.
Any turn-based strategy/RPG: Heroes of Might and Magic, any Civilization, Age of Wonders, Galactic Civilizations, X-Com, Divinity:OS, bonus is that they're all great time-wasters.
Europa Universalis is an amazing grand strategy game and can be played entirely with mouse.
Point & click games are obvious choice I`d say:
Botanicula
Machinarium
or any of the other games by Amanita.
