I voted no, but the reason why is that I'm a qualified equivalent of a paramedic (not my profession, but beats nothing) - so if I'm unable to fix myself, then all I have is a panicking woman in a bank full of panicking people - and I'll probably bleed out before help arrives. Whereas if I'm conscious and she doesn't die instantly, there is a pretty strong chance I can both call 911 and stabilize her.

Then I take the bullet. I've put my life on the line for less than a girlfriend before - and initially when I thought about the question I was like "of course I step in the way" - until I thought about who that leaves in charge of fixing me.

In a hostage situation if the opportunity was presented I would risk my life to stop the gunman. If I die in the attempt so be it. But dying just to stop a bullet? That's kinda dumb. The gun probably has more than one bullet, so your girlfriend may die anyway.
