i want to play a stealth class again, but im having trouble choosing between operative or shadow.
does the consular story jive with the style of a shadow?

Not much unless you prefer to be a little more dark than a normal Jedi.
If you plan to be a dark Jedi then it makes sense to be a Shadow.
It fits easily as light and dark side.
Being an infiltrator doesn't mean you are somehow evil.
I got to go with this. ^
Leveled the shadow but didn't feel the need to be some dark side consular. The main difference I felt as a shadow vs the sage was, my shadow was quicker to realize physical confrontation was inevitable in many situations and that diplomacy would not solve everything. My sage was more reverent and tried to smooth things over more often. Bad guys still went down either way.
Only in the sense that the Shadow sticks to the sidelines and does all the behind-the-scenes work that very few are aware of. But not if you picture the Shadow as someone who sneaks around assassinating people. For that, the Operative is a much better choice (and a much better story).
[Also, note that Shadow = Republic and Operative = Empire]
My main is shadow, but is tank spec. So in that sense, I felt that it was fairly proper. Negotiations go sour, this room full of would be wrong doers weren't getting the drop on me. I like to picture being completely diplomatic and then "Well, if you won't listen to reason... *Nadia's double-bladed light saber unsheathes* we have other ways of communicating."
Even as a tank, you can sneak around and CC and assassinate.
