Another noob UH DK, another noob question

So I've been playing frost for a while now and just happened to get Vial from one of my mythic caches. I keep reading/hearing that UH pulls away from Frost for pretty much every encounter, although when I sim both my gear sets (accounting for BoS, NP as well the advised trinkets for certain situations) my Frost gear still pulls ahead.

Could this be because my Frost gear is just a few pieces off from complete BiS and I'm missing the weapon off Zakuun and only having the heroic version of UeH for Unholy? Or is it because sims aren't necessarily going to reflect how Unholy's performance will be with HFC bosses? I mean just looking at logs, Unholy just dominates every mythic encounter for pretty much anything above 730+ item level.

Sim's don't model Breath correctly

It doesn't account for ams soak which gives you more ticks of Ring-empowered BoS.
