    Interesting to see how many seem to prefer it as soup. We do have several kinds of soup here that use mutton and I enjoy them, but I like the grilled lamb/mutton even more. We have a lot of places here that will pre-bake a leg of lamb, then bring it out to your table where you finish it over a grill set into the table.
    With COVID-19 making its impact on our lives, I have decided that I shall hang in there for my remaining days, skip some meals, try to get children to experiment with making henna patterns on their skin, and plant some trees. You know -- live, fast, dye young, and leave a pretty copse. I feel like I may not have that quite right.

    i find lamb is really easily overcooked when i order it out, often comes out tough which isn't nice!

    however, i love roast lamb at home, but my favourite lamb dish is a slowcooked minted lamb hotpot / stew, yum!!! the lamb goes so tender its amazing

    i dont think ive ever had actual sheep though, only tasty little lambs.

    Sheep soup here tends to be Xibei (Northwestern) and strongly associated with Gansu cuisine. They are famous for their hand pulled noodles. That soup looks good, but I'd miss the noodles that are a key part of Lanzhou lamian (兰州拉面)

    I tend to like my non-Xinjiang sheep a bit rare, but the Xinjiang places take pride in keeping the meat moist and the fat crackling. The place I go to isn't as fancy as the provincial restaurants in Beijing, so they usually use metal skewers instead of the wood shown in this shot:

    @Treeskee An earlier post seemed to suggest they were similar. I can't offer much comparison, I haven't had goat specifically as goat for probably 30 years. When eating street food, there's no telling what the meat might actually be though.

    I hate sheep. Fuck them in the ass. They are abominations. A cult of evil sheep kidnapped my cousin's daughter sister in law. I had to punch a bunch of sheep in the face until I faced their leader to save her.

    I have never eaten them because of this. Fuck sheep.
