I'm always wondering which structures are the tallest ones of each content.

Classic:
Hyjal (Kalimdor) and the Blackrock (in fact you can't unsee this monstrous volcano even from blasted lands)

Burning Crusade:
I guess it's some random spire in Blades Edge Mountains

WotLK:
Temple of the Storms

Cataclysm:
see above

MoP:
Mt. Neverest

WoD:
Mt. Volwrath

Legion:
I guess some peak in the Highmountain

What are your guesses?

Also, could the top of Tempest Keep be above the spires in Blade's Edge? It's already floating, so it starts off at an advantage.

its not, if you travel from temple of the Storms to Icecrown citadel you hit the sky ceiling and are forced into a heavy depression height wise, ICC only gets slightly higher than the rest of Icecrown

ICC isn't that high... the entire zone slopes downward towards it, oddly. You can fly from the high north cliffs of the zone south toward the Citadel and not have to go up to reach it really.
