It's what the OP said/asked, really. I run a restaurant. You're not coming back if it takes my servers hours to get you a glass of water. If I keep hearing that's happening, the server doesn't have a job. And I might go out of business.
DMV doesn't work that way, mostly.
Calm down. Trust me, the DMV does not want things to take longer than they have to. Then they have to hire more people to handle the traffic. The more efficient, the less people need to be hired. They just can't account for all the variables that are people and so it's inevitably going to be slow sometimes.

Depends on where you live.
In some GOP controlled states with rigid voter ID laws, they close DMVs in areas that tend to vote Democrat, reduce the hours of those that remain, expand the hours in Republican areas, etc. Everything they can do to make sure Democrats can't vote, or can't be bothered to go through the incredibly burdensome motions to vote to be more precise.
Two recent examples are Wisconsin and Alabama, though it is always going on. Especially in major cities (aka Democrat bastions).

I think it's vermont or new hampshire, you can do all your dmv shit at your local townhall. This is how it should be, everywhere. I've had to go to the DMV in 3 states, Rhode Island, Connecticut, and Wisconsin. Connecticut is by far the worst. Didn't bring a pen with you? Fuck you spend 3.50 and buy one out of the machine. Looking for a surface to write on? Fuck you, go back out to your car and use that for a writing surface. Have to use the bathroom? Fuck you, our public bathroom has been broken for 6 years. Already have all your paperwork and know where to go? Fuck you, you gotta wait in line to get a number to wait in a line to be sorted into the line you wanted to get into in the first place. Try to talk or use your cellphone? Fuck you get escorted out by security if you do. The worst part of it is the array of flat screen tvs playing the same 5-6 advertisements at an obnoxiously loud level. What you need to get your picture retaken? Fuck you, were backed up, you can take the picture today but you have to come back tomorrow or the day after to get it.
Generally at the end of each month. I know the drill. And I am a high-octane person, didn't mean to project anything negative at you. This is my day off (that was singular), so I'm chilling to some tunes and some housework. Should see me when I'm at full speed for a 16 hour work day. Sorry for coming across as harsh.
MA is pretty damn bad is all I'll say. I remember the day I got my driver license and as I was getting out of the car a women beside my car had a mental break down because of the DMV. It was a 3 hour wait that day just to hand them a piece of paper saying I passed...
The DMV I go to is a smaller one, the line forms at an hour before opening and remains all day long. That being the line for folks without appointments. There is another line too, for folks with appointments. You walk in, if there's another person ahead of you it's a miracle. You are called next, ahead of all the "show up and wait" folks, and are in and out. Sometimes you are done before the next "show up and wait" person makes it to the part where they get to take a number.
And yeah, mostly everything gets delayed by folks needing the requirements explained in depth since they didn't see what would be required beforehand.
You wanna talk fun, try filing a form with the ATF/ NFA branch. 6+ months to stamp something approved...

I've never had to wait at a DMV for more than a few minutes.
it's like any retail storefront though, busy days happen (and the more demands there are on everyone's time, generally the slower everything moves)
I can go to any place that sells car insurance and get my license renewed. Manitoba > U.S.
Last time I went was to get my name changed and the line wasn't too long. The women at the front desk was a bitch though as soon as her shift ended she left and I had to explain again to the next person that I needed a name change on my driver's license.
Oh and the old guy who took my photo told me to look at the wrong object so my driver's license photo looks like I have my eyes crossed.
Must suck to live in a blue state. Here where I live, I just text the number then wait until it tells me my turn in line is up in 10 minutes before leaving the house. Government will always be inefficient but, take away the union representatives being on both sides of a negotiations table, and you would be amazed how much better things run.

Our Strayan' equivalent is usually pretty bad (30-60mins) but now we can renew our driver's license online and receive it in the mail.
I won't have to personally walk in until my digital photo turns 9 years old in 4 years.

I remember some guy ran a service where he would go to the DMV for people. I'm not sure how he did it, maybe there was a special law in that state that allowed it.
We've had older relatives we didn't want to drive anymore for fear they'd kill someone. Hard to explain it to them, it's a big loss of independence.
