Is that like the more sophisticated wine palates? where in an elite wine connoisseur can be fooled by a box of red wine over a 200$ bottle?
As to the OP, the only thing i can think of with cheese is it may be more pungent, which comes down to taste on if you will like it more or not.
There's a big difference between good and bad cheese. If you want to buy cheap shitty cheese then do that, but to hate on others who likes better cheese is lame.
Also, besides different tastes, cheeses can have very different properties/uses. Young cheeses melt nicely and can be used for grilled cheese sandwiches or cheeseburgers. Cheeses like Parmesan can make great additions to a sauce, or when put under a grill turned into a crispy wafer. There's a cheese for everything.
Every cheese I've tried taststed different. Though I wouldn't say any of them tasted bad unless they were mixed with something else (Like cranberries, I fucking hate cranberries and whoever thought to defile cheese with them).
