You could have the world in the palm of your hands
You still might drop it
In no order:
Pebber Brown - no bullshit, absurdly extensive collection of guitar lessons.
Ben Eller - more lessons, fairly funny guy at times
Pete Thorn - gear reviews, stupidly good player
Rob Chapman, the Captain, That Pedal Show - more gear reviews
1320video, SavageGeese, LethalHammer, Schmee, Petrolicious, LowMileage, The Smoking Tire, IMSA TV, etc - all sorts of car shit.
Trent Kaniuga, FZDSchool, JJCanvas, Aaron Blaise - digital art
Fatboss, Preach - WoW stuff
LinusTechTips - pc gear
Lots of others, but those are the ones I tend to be a pretty consistent viewer of.
This is a good thread, I'll be checking out lots of others that folks list.
The Great War
Scholagladiatoria
Joseph Anderson
Forgotten Weapons
Cayleigh Elise
Bunch of others but these are the ones i see regularly

techmoan
reviewtechusa (though his videos are starting to go sort of downhill and getting really sort of clickbaity or just about random news articles.)
i have others but i don't watch them as much.
most of those channels do long critical reviews of various products in one form or another. most longer than 10 minutes.
one is a glitchrun channel that does 100% runs doing as many glitches as possible with explanations of how to do the trick and explanations of how the trick works unlike the other 90% channels about it that just talk in leet speak and are quite frankly annoying to listen to and don't explain it or assume you know the setup and lingo and explain it that way.
one is about world war 1.
one is a analysis on dead mmo's and why they died using sources and research to back up the assertions.
one talks about random history events and game design and development.
also if anyone knows of any anti draenei pro blood elf channels let me know.

I don't really watch Youtube let's plays and stuff but I really enjoy TFS. They are just so fun to listen to, especially during Nuzlocke and Dragonball related stuff. Plus knowing that the money they get from that goes over into the abridged series gives me more reason to watch it. I'd like to watch some other channels but I really don't have the time.
I watch a lot of youtube, pretty much don't watch TV and always have access to a computer or my phone, so it's the natural way of things. These I highly recommend.
Mighty Car Mods - 2 Australian dudes modifying cars, it's a pretty massive show at this point as the guys are extremely likable and genuine.
ADVChina - 2 dudes living in china, travelling on motorbikes discussing local issues and chinese cultures and related topics.
Digital Foundry - Their retro series on old games is particularly good, but this is the best gaming related tech channel.
Troy Grady - He's a guitarist + teacher, his "cracking the code" series in incredible, with great production values and some amazing observations.
Summoning Salt - He makes documentary type videos covering gaming speed running world records and their history with various games.
TeamFourStar - Dragonball Z / Final Fantasy 7 parody videos, incredibly well done.
ThunderF00t - He mostly makes scientific videos and debunks fake/dumb technology pitches, like solar roadways and self filling water bottles.
Probably running on a Pentium 4
Forgotten Weapons ~ gun videos
Mister Metokur ~ his tumblrisms videos are quite amusing
Asmongold ~ world of warcraft videos
-H3H3productions but they're kind of boring lately.
-Matt from Demolition Ranch. Fun gun videos that aren't boring old men droning on about specs for 30 minutes. (which is fine but not something I'm looking for atm)
-Idubbbztv. Just a funny guy but he doesn't upload that frequently.
-Theneedledrop. Good music reviews that's introduced me to a lot of new artists.
Definetly the Hodgetwins.
Next would be H3H3
Jordan B Peterson's channel too
TJ Kirk
The Drunken Peasants
Game Grumps
Hat films
Yogscast
Force
Jesse Cox
Anthony Fantano
videogamedunkey, he's not annoying, and he's coo, sense of humor is awesome.
