Hmm...I'd pick a different yardstick to be honest. Sure, a coyote could outrun you, but unless you were old or weak or something, killing one without any weapons or tools should be pretty doable. Though in reality it wouldn't even come to this; both wolves and coyotes are quite afraid of adult people, and won't even attack them in packs.
And as far as hearing, sight, and smell, that's all relative. For example, a lot of people assume that most/all animals have better smell than a human, but actually hardly any do. A common myth for example is that if you touch a bird's babies then it will abandon them because it can smell what you leave behind, but this is totally false; for starters, your sense of smell is a LOT better than the bird's.
