Night elf. More dodge is always welcome ! The hardest part about being a brewmaster is timing your shadowmeld properly when you want to reset the boss during a wipe (looking at you, stagger !).

Chiming in with some Lore interpretations.

Dwarves: The original Masters of the Brew. Even from as early a time as when they were known as the Earthen; the Dwarves held an innate understanding of the natural forces of this world and they'll be damned before they stop using that knowledge to craft the perfect ales. No strangers to the almost-Shamanistic powers utilised by Monks, Dwarves are also plenty capable of throwing the harshest haymakers on Azeroth.

Gnomes: Gnomes are born to a world of chaos and that's before they leave the safety of their starting zones. Some Gnomes have obtained true enlightenment -as one is wont to do after one too many electrical fires- and sought out the most serene places in the world. This brought them on a Zen Pilgrimage to the Peaks of Serenity where even their own haywire thoughts are settled. Anybody who says Gnomes are too small to pack a respectable punch is underestimating how nimble these fierce fighters can be. Their punches sting like a swarm of bees, whilst "specially-designed" Heat-Seeking Eye-Goggles give them a unique advantage when fighting under the veil of their own mists.

Night Elves: It's easy to forget that Monks are, for all intents and purposes, Druids of another path. Like the Druids, Monks draw upon the wisdom and power of their patron Wild Gods: The August Celestials. Night Elves, especially, were quick to realize this parallel and it did not take long for curiosity to lead to some Druid initiates to make the move to Pandaria to better understand this ancient connection. Indeed, the Night Elves recognise that "changing form" has many meanings and, whether it be a change in fighting stance or shifting your entire body, adaptation allows them to best channel the power of the Ancients. Night Elves also have a natural dexterity and agility, which hush the teasing whispers from other Monks that wine can't really be considered a legitimate brew.

Draenei: Regardless of their ultimate calling, Draenei novices are trained from infancy to refine the Gifts of the Naaru --acute senses, honed reflexes, enhanced strength and endurance and an affinity to the Arcane-- so that they can best serve on whatever path calls to them. Draenei are particularly adept at using their opponents strengths back against them and making the most of their environment by combining their strength of will with sharp analytical minds. It was only by observing their Broken brothers and sisters embrace the Shamanic arts that they realised there is power beyond the calling of the Naaru, or at least in tandem with it, and so it was that a handful of Draenei began to see how far they could push the limits of their physical and mental acuity in combat.

Humans: Humans can also be Monks.
